Wednesday I was finally able to admit Fall has arrived.
I haven't been resisting it by any means; it just hasn't felt like Fall.

In celebration of (me falling for) Fall
I opened the windows, felt the breeze, and made some awesome soup.

Chicken Fajita Soup
1 can chicken broth
1 can diced tomatoes
1 can tomato sauce
1 can corn (drained)
1 can black beans (drained)
1 bell pepper (diced)
1 small onion (diced)
4 cooked chicken breasts/whole small rotisserie chicken (shredded)
1 package of fajita seasoning
1 juice of lime

In a large pot sauté onion & pepper.
Add everything else to the pot and bring to a boil.
Reduce heat to low and let simmer for 20 minutes.
Serve with shredded cheese or sour cream...or both!
