a {lovely} day & a recipe

Yesterday was such a lovely day.
-nice weather
-a picnic
-best dinner ever

Mr.Wonderful's grilled chicken + my twist on this pasta salad +
garlic asparagus = best dinner ever

Recipes {remember, I don't read/follow directions well so I don't give them well either}

marinade for grilled chicken:
2 cloves garlic
2 juice of limes
1 jalapeño (seeded and diced)
1 tbs Coriander 
1 tsp salt
1 tbs olive oil

Combine in a food processor for about 30 seconds. Pour over 4 boneless, skinless chicken breasts (I throw it all in a gallon freezer bag) and marinade in refrigerator for an hour. Oh and I add about 1/4 or 1/2 cup of orange juice in there b/c I thought it would be good (and it was).

my twisted pasta salad:
1 box of whole wheat rotini or fusilli 
kosher salt
fresh ground black pepper
6 tbs olive oil
3/4 cup pitted kalamata olives (drained)
1 clove garlic
1/2 cup flat leaf parsley
5 leaves fresh basil
2 tbs capers (drained)
fresh mozzarella (I used a package of mozzarella pearls)
1/3 cup sun dried tomatoes

Cook pasta as directed, drain, and put in large bowl.
Combine olive oil, garlic, parsley, basil, sun dried tomatoes in a food processor until almost smooth. Pour over pasta and add olives, capers, & mozzarella.  Toss ingredients together and season with salt & pepper.
